Cooking Instructions:
Roasting: Preheat oven to 180°C. Score the skin, rub with salt and oil. Roast skin-side up for 30 minutes, then reduce to 160°C and roast for a further 2 hours or until skin is crispy and meat is tender.
Braising: Heat oil in a Dutch oven over medium-high heat. Brown pork belly on all sides. Add onions, garlic, stock, and herbs. Cover and simmer on low heat for 2-3 hours or until meat is fork-tender.
